To be honest, this meal got lost somewhere in the computer transfer - i can't really remember making it, but judging by the tomatoes, it must have been a while ago because i'm pretty sure they are from a farmer's market. Well it was labeled peanut soba noodles... so i'm guessing that's what it is.
Judging from the pics i used zucchini, eggplant, mushrooms, onions garlic for the veggies. I probably just sauteed them and made my blender
lime peanut sauce. (partially i'm guessing this as i saw a lime in the last picture)
