After the over-done ribs i had quite a few left and had to think of something to do with them. They were almost the consistency of pulled pork, so i thought i would try and make them into pulled pork nachos - which i read about somewhere.

I took the meat off the ribs - which was quite easy, sort of shredding or pulling them in the process. I then mixed them with some bottled sweet bbq sauce. I included the standard nacho toppings, tomatoes, onions, jalapenos, salsa and of course cheese.

Once the nachos were melted and hot i topped the nachos with shredded lettuce. I would actually have added sour cream but i didn't have any around. Overall not a bad save for some over-done left-over ribs.
