I haven't done a double duty in a little while, and recently while shopping i saw that the PC Tuna were on sale. I don't really love these on their own - they are not really what i like tuna to be flavoured like, but they were on sale, and are pretty healthy. I thought i could make something interesting with them, and its sometimes nice to have frozen things that are quick to add to a meal. So i brought out the trusty Hamilton Beach Grill and cooked two of them at the same time, planning on eating one now, and making something with the second the next day.
Meal One: Tuna Burritos
(or wraps if you wanna get technical)
I've recently been thinking about the Tuna Burrito at Utopia on College street, and thought this would be a way of satisfying that craving without the money or the trip to college. (though after i still wanted it, maybe even more.
The ingredients (above) were pretty simple - spinach & arugula, tomatoes, green onions, ranch dressing and of course the tuna. I actually threw these back on the grill after wrapping them to make them even tastier.
Meal Two: Nicoise Salad
I am a total sucker for nicoise salad - and there are a lot of puritans who get their panties in a knot about how this is made - i am not one of those, so in my opinion cold tuna burgers are fine.
For the dressing i made a simple dijon vinaigrette. Nothing too fancy, just grainy dijon, red wine vinegar and olive oil. If i had a lemon i would have added it too, but i didn't.
Before i hard boiled the egg, i blanched the green beans, kinda combining the steps. For the rest of the salad i had nicoise olives, tomatoes, tuna, red onions, spinach and the egg and beans. I tossed the spinach in 2/3 of the dressing, then the beans. I topped the salad with the rest of the topping and drizzled the remaining dressing on top.
