Dinner out of what i had


Sometimes going to the grocery store is just too much after work - the thought of the crowds and the line-ups make me shiver. Normally in this case i'd end up getting Curry Twist or eating popcorn for dinner - but unfortunately i had promised to make dinner for someone - so i couldn't really serve them popcorn with hot sauce.

Undaunted i began to look around my fridge and pantry for something to make. Pasta is always a good standby - and i usually have a box laying around, unfortunately i didn't have much to make the sauce. I ended up making a sort-of from scratch sauce by roasting cherry tomatoes with shallots and garlic. Its a good base for a lighter sauce as i'm not really the biggest fan of plain tomato sauce.




For the rest of the pasta i blanched some asparagus, green beans and brocoli, then sauteed some of the rapini i had. I added the roasted tomatoes, jarred roasted red peppers and some left over pesto along with sundried tomatoes and some of the oil they were in.


Once everything was all warm and mixed i suddenly realized that there wasn't really a creamy component to my dish, and i like pasta a little creamy - i didn't have any cream or milk, but i did have some goat cheese - i thought the tang would be nice, and it was.

I added the noodles and tossed.


Voila - dinner out of what i had!
